FARM:
The Jaeno producer, owner of the Romerillo farm, presented micro-lots of coffee of the Caturra and Costa Rica varieties, obtaining a cup score of 91.85.
He has been dedicated to coffee cultivation for seven years, and his passion was instilled by his parents since he was very little. “Love for the land and, above all, for our flagship product, are some of the qualities to obtain quality coffee,”
FERMENTATION:
After a selective harvest, the cherry tree is washed, and then bagged for two days, at a temperature of 15 to 17 degrees. Then he continued with the pulping, then shaking the coffee again until the mucilage of the grain is completely detached to proceed to washing; Subsequently, drying continues for an average of 15 to 20 days, once the coffee is dry, it is bagged so that it does not gain moisture and maintains the same quality.
