ORIGIN INFORMATION:
Roger Antonio Domínguez Márquez owns Finca Las Acacias, a 5-hectarefarm in Marcala, La Paz, where he grows around 21,000 trees, mainly Bourbon and Caturra. A part of this 5-hectare farm is dedicated togrowing the Catuai varietal and naturally processing this specialmicrolot. After harvest, cherries are depulped the same day, dryfermented for 18 hours in tanks, washed three times, and dried natural on raised beds for an average of 12–15 days.
